Gluten & Dairy Free Fried Chicken

I have been gluten free for 8 years now and to be honest I don’t really miss it except for ChickFilA. Y’all know what I’m talking about haha. Mathew and I have made many different recipes in the past but this has got to be my favorite one thus far. It’s seriously so delicious and easy!

Ingredients:

1 lb of chicken breasts cut thin and hammered out

For the brine:

1 cup of oat milk

1/2 a cup of pickle juice

1 egg beaten with a fork

1 tsp of cayenne

1 tsp of salt

For the breading:

1 cup of rice cereal smashed in a bag

1/2 a cup of tapioca starch

1 tsp of garlic powder

1 tsp of onion salt

1 tsp smoked paprika

1 tsp cayenne

1 tsp salt

Coconut oil for frying (or oil of choice)

Directions:

1. In a gallon bag mix the brine ingredients together and place the chicken in and refrigerate for at least 4 hours but up to 24 hours

2. Mix up the breading ingredients on a plate

3. In an iron skillet heat up your oil of choice

4. Take the chicken out one at a time and cost it in the breading mix and then straight in to fry

5. Cook 3 minutes each side

6. Continue with each piece of chicken until done

That’s it guys!! I hope you enjoy and let me know if you need any help!

  • It. Is. Friday. I couldn’t be more excited about it being the weekend... not going to lie, it’s been a tough week! Luke hasn’t been napping and let’s just say none of us are feeling it. It’s SUPER hard to keep a positive and thankful mindset when things aren’t going the way that I imagine they should. This morning I decided to write down some things I am thankful for to try and set the tone for the day. I encourage you to do the same if you’re on the struggle bus this week as well! Tell me below some things you’re thankful for! ▶️swipe to see my list

  • | ELEVEN MONTHS | I am a couple of days late but this little guy is growing up so quickly! Can’t wait for his birthday next month! He took his first steps, eats constantly, and loves to point at everything! 🥰
  • When it comes to seasonal decor I tend to stick to a very minimal look (minus Christmas of course) so I styled some simple fall Target decor pieces that I think you will love for a minimal look and low cost! Go check it out on my website or the like to know it app!
