Coconut Lime Chicken Curry

Hey everyone! I know I showed y’all how to make my delicious curry the other night on stories but lets be honest, I was kind of a hot mess trying to cook it and show y’all while Luke was awake! I wrote down exactly how I made it below so that it would be easy and you could even print it. Feel free to reference my stories if you want to watch! Coconut Lime Chicken Curry

Ingredients

  • 1 Leek Chopped
  • 1 tbsp Coconut Oil
  • Salt To taste
  • 1 tsp Fresh Ginger
  • 1 tbsp Minced Garlic
  • 1 tsp Tumeric
  • 1 tsp Fish Sauce
  • 1 tbsp Red Curry Paste
  • 1 Lime Zested
  • 1 Lime Squeezed Juice
  • 2 Cans Coconut Milk
  • 1 lb Chicken Thighs

Pair with

  • 1 cup Cauliflower Rice
  • 1 cup Rice

Instructions

Chicken

  • Brown the chicken thighs in a pan with coconut oil until slightly brown on each side (about 3 min a side) and then set aside

Curry

  • In a skillet, saute the leeks in the coconut oil until soft and browned (You can also sub onion)
  • Add in the ginger, garlic, salt, tumeric, fish sauce, and red curry paste and stir until well mixed
  • Add in the zest and juice of 1 lime and stir
  • Pour in the coconut milk and stir
  • Place the chicken back in the skillet and simmer on low for an hour

Rice

  • 30 min before you're ready to eat cook some rice and mix it with the cauliflower rice if desired
