I get so many questions all the time about what I feed Luke! It can be a daunting task to cook things for your little one especially when it’s so easy to just grab something already made and ready to go. I don’t always have loads of time on my hands but when I do I love to try new things for Luke and he seriously always loves it more then things I just buy… except for cauliflower gnocchi of course.

Sweet Potato Chicken Nuggets
- 1.5 cups finely shredded sweet potato
- 1 lb ground chicken
- 2 tbsp coconut oil
- 2 tbsp coconut flour
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion salt
- Preheat the oven to 400
- Line a baking sheet with parchment paper
- Mix all of the ingredients up in a bowl and form into nugget shapes
- Put in the oven for 12 minutes then flip to the other side and cook for an additional 12 minutes and/or until internal temp of 165
