One of the hardest things with a tiny baby at home is finding the time to cook dinner. We have been blessed by so many people bringing us food and providing for us during this time but we also are to the point where we are doing more and more on our own! With Mathew working long hours during the week it can be hard sometimes to find the time to cook. That being said I have come up with an easy way to be able to throw together a dinner quickly once Mathew gets home.
I got two packages of chicken thighs out of the freezer, my crockpot out and then began to make a whole pot of chicken to last us through the week. This way we can just cook up some rice, pasta, tacos, or whatever and already have the protein cooked for it.
I put all of the chicken into a crockpot
I got the seasonings that I wanted out! You can use whatever you like but we used basil, oregano, onion salt, salt, cayenne, garlic powder, and crushed red pepper
I then cut up two large onions (we love onions) and a tub of mushrooms from Costco
Lastly, I poured in some chicken broth and red wine for it to cook in
I then set the timer for 8 hours on Low
Like I mentioned before this is just an easy way to prep the protein ahead of time so that all you have to do is whip together a simple dinner during the week nights!
