Hey everyone! I can’t beleive it’s New Year’s Eve! Ahhh! Does anyone have super exciting New Years plans this year? Our plan is to be in bed by 9 and get some sleep with our baby… I know, SUPER thrilling haha! But tomorrow we are celebrating Christmas with my dad so that will be super fun!
My cousin Katie sent me a soup that used the cauliflower gnocchi from Trader Joe’s and that sparked me creating this soup using it as well! I would have just made that recipe but it had multiple things I can’t eat in it so I tried re-creating it with what I could have!
The Instant Pot sure makes everything easy which is perfect for busy weeknights!
1 pack or Turkey
1 cup of mushrooms
1 bunch of kale
32 oz of chicken broth
1 bag frozen Cauliflower Gnocchi
Turn on the Instant Pot to sauté and spray with avocado oil to brown the turkey
Once brown, take out the turkey and set aside
Spray the pot with oil again and then sauté the mushrooms and onions for 3 minutes
Pour in the chicken broth and scrape the bottom of the bowl to remove any browned parts
Add the turkey back in, the kale, and the seasonings to taste
Set the Instant Pot to “soup” for 12 minutes
While the soup is coming follow the directions for stovetop on the gnocchi bag
Once the soup is cooked, add in the gnocchi, top with cilantro and serve!
