Butternut Squash and Apple Soup

Happy Monday! It’s still chilly here in Texas so I decided to make a delicious soup for the week! My aunt had sent me this recipe a couple of weeks ago telling me how delicious it was and that I needed to try it.

Ingredients:

1 medium butternut squash cubed

5 Granny Smith apples cubed

1 onion

Garlic

Cayanne, salt, pepper

3 cups of cashew milk (or dairy free sub of choice)

Directions:

  1. Cut up the squash, apples, and onion and place on a baking tray with the garlic

  2. Drizzle with olive oil, sprinkle the desired amount of seasonings over the pan and mix around to coat the ingredients

  3. Bake in the oven on 400 degrees for 45-50 minutes

  4. Then either in a blender or using an immersion blender blend up the ingredients from the sheet pan

  5. Add in the cashew milk and continue blending until smooth

That’s it! I think the hardest part about the dish is cutting stuff up… if you shop at Costco you can even skip one step by purchasing already cubed organic butternut squash! Pretty simple!

Be careful using an immersion blender! Always make sure you have it in the pot before plugging it in… I had a rough incident involving my ring finger… I’ll leave it at that!
