Whole Chicken Instant Pot

Hey everyone! So sorry that I have been MIA the past week. My baby Luke got sick and then my husband got it and then I got it… so needless to say I was a tad busy! I am back now though and have a lot of great content lined up for February and I can’t wait to share it with y’all!

I love having a rotisserie chicken on hand for so many reasons but one is that there are times when my husband gets home late from work and we can easily just throw the chicken into some pasta, make a taco, or do an asian rice bowl. However, finding an organic one is pretty hard and we only eat organic meat. That being said, I decided I should try making my own whole chicken in the Instant Pot! It turned out delicious and we even saved the bones and made bone broth… which came in handy when we all got sick!

Ingredients:

  1. 1 whole organic chicken

  2. 1 cup of chicken broth

  3. 5 tablespoons of softened butter

  4. Onion powder, garlic powder, salt, thyme, paprika, oregano, pepper, cayenne

  5. 1 cubed onion

  6. 1 lemon- quartered

  7. 6 cloves of garlic- smashed

Directions:

  1. Rub the chicken with the butter

  2. Mix together all of the seasonings and rub them on the chicken

  3. Stuff the chicken with the onion, lemon, and garlic

  4. Place the trivet into the Instant Pot and pour the chicken broth in the bottom

  5. Place the chicken on top of the trivet

  6. Close the lid and set the manual pressure (Check below for cooking times)

Cooking times:

3 pound chicken- 20 minutes high pressure – 15 minutes natural pressure release

3.5 pound chicken- 22 minutes high pressure – 15 minutes natural pressure release

4 pound chicken- 25 minutes high pressure – 15 minutes natural pressure release

4.5 pound chicken- 27 minutes high pressure – 15 minutes natural pressure release

That’s it! It is super simple, delicious, and you can use it in so many ways! For this one we ate it with tacos, pasta, with potatoes, and more! I will do a bone broth recipe in the near future as well! It is also very easy with the instant pot and takes no time at all!
