Garlic & Red Wine Short Ribs

Short rib ingredients:

– two lbs short ribs

– 2 cups of red wine

– 2 cups of chicken broth

– 3 tablespoons of minced garlic

– 1 tbsp of tomato paste

– 1 onion chopped

– 2 tbsp of coconut oil

– garlic chives for garnish

Directions:

1. Heat up the coconut oil in a Dutch oven or oven safe pot and sear every side of the spare ribs for 2-3 minutes a side (all 6 sides)

2. Remove them and set aside

3. Add in more oil as needed and cook the onions and garlic together

4. Add in the tomato paste and stir until mixed

5. Put in the wine and scrape off any bits stuck to the bottom of the pot – about 4 minutes

6. Add in chicken broth (or beef) and then put the ribs back in the pot

7. Make sure they are just covered with liquid. If you need to add more liquid just continue adding equal parts wine and broth until covered

8. Bring this to a simmer and then put the lid on and place in a 275 degree oven for 4 hours

9. Remove the ribs and enjoy!
