Gluten & Dairy Free Fried Chicken

I have been gluten free for 8 years now and to be honest I don’t really miss it except for ChickFilA. Y’all know what I’m talking about haha. Mathew and I have made many different recipes in the past but this has got to be my favorite one thus far. It’s seriously so delicious and easy!


1 lb of chicken breasts cut thin and hammered out

For the brine:

1 cup of oat milk

1/2 a cup of pickle juice

1 egg beaten with a fork

1 tsp of cayenne

1 tsp of salt

For the breading:

1 cup of rice cereal smashed in a bag

1/2 a cup of tapioca starch

1 tsp of garlic powder

1 tsp of onion salt

1 tsp smoked paprika

1 tsp cayenne

1 tsp salt

Coconut oil for frying (or oil of choice)


1. In a gallon bag mix the brine ingredients together and place the chicken in and refrigerate for at least 4 hours but up to 24 hours

2. Mix up the breading ingredients on a plate

3. In an iron skillet heat up your oil of choice

4. Take the chicken out one at a time and cost it in the breading mix and then straight in to fry

5. Cook 3 minutes each side

6. Continue with each piece of chicken until done
