Coconut Lime Chicken Curry

Hey everyone! I know I showed y’all how to make my delicious curry the other night on stories but lets be honest, I was kind of a hot mess trying to cook it and show y’all while Luke was awake! I wrote down exactly how I made it below so that it would be easy and you could even print it. Feel free to reference my stories if you want to watch! I hope you enjoy and let me know if you have any questions!

Coconut Lime Chicken Curry

  • 1 Leek Chopped
  • 1 tbsp Coconut Oil
  • Salt To taste
  • 1 tsp Fresh Ginger
  • 1 tbsp Minced Garlic
  • 1 tsp Tumeric
  • 1 tsp Fish Sauce
  • 1 tbsp Red Curry Paste
  • 1 Lime Zested
  • 1 Lime Squeezed Juice
  • 2 Cans Coconut Milk
  • 1 lb Chicken Thighs

Pair with

  • 1 cup Cauliflower Rice
  • 1 cup Rice

  • Brown the chicken thighs in a pan with coconut oil until slightly brown on each side (about 3 min a side) and then set aside

  • In a skillet, saute the leeks in the coconut oil until soft and browned (You can also sub onion)
  • Add in the ginger, garlic, salt, tumeric, fish sauce, and red curry paste and stir until well mixed
  • Add in the zest and juice of 1 lime and stir
  • Pour in the coconut milk and stir
  • Place the chicken back in the skillet and simmer on low for an hour

  • 30 min before you're ready to eat cook some rice and mix it with the cauliflower rice if desired
