Curry Meatballs

This new recipe I tried was SUPER yummy and will be wonderful now that the cooler weather has FINALLY arrived! I had mentioned on my Instagram stories that I have been choosing meals that are easy to make during one of Lukes naps and then have it ready for when dinner time rolls around. So many of you voted that you would me to share more of those with you and this is one of them! I cooked the meatballs during his nap and then later got the sauce ready and put it in the fridge until it was time to eat.  I then pulled it out and threw it back on the stove to heat it up and paired it with some rice! It was wonderful!

I hope you all have a wonderful weekend! We have our little family pictures tomorrow and then of course the Arkansas football game… maybe we will show up to this one! We are excited to be able to watch it outside with our new fire pit! Looking forward to that!

Curry Meatballs

Ingredients

Meatballs

  • 1 lb ground turkey
  • 1 egg or subsitute
  • 1 tsp fresh ginger
  • 1 tsp garlic powder
  • 1 tsp chili flakes
  • 1/2 tsp salt
  • 2 tsp curry powder
  • 2 tsp red curry paste
  • 1/2 cup almond flour

Curry Sauce

  • 1 tbsp coconut oil
  • 1 tbsp minced garlic
  • 1 onion- chopped
  • 2 tbsp red curry paste
  • 2 can coconut milk
  • 1 tsp fish sauce
  • 1 tbsp coconut aminos

Instructions

Meatballs

  • Preheat the oven to 350
  • Line a baking sheet with parchment paper, roll the turkey into balls and place on the sheet
  • Cook for 20 minutes or until internal temp of 165

Curry Sauce

  • Cook the onion in the coconut oil in a pan for about 3 minutes and then add in the garlic, curry paste, fish sauce, and coconut aminos
  • Once mixed well add in the coconut milk and stir well
  • Add in the meatballs and enjoy!
