Ingredients
- 1 cup oats
- 1/2 cup coconut sugar
- 1 cup vanilla coconut milk yogurt
- 1/3 cup butter melted
- 1 egg beaten
- 1 cup gluten free flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 cup strawberries chopped
Instructions
- Mix together the oats, coconut sugar, yogurt, butter, and egg in a bowl
- Add in the flour, salt, baking powder, baking soda and mix together
- In another bowl mix the strawberries with 2 tsp of flour and stir together
- Pour the strawberry mixture in the other bowl and fold in with a couple folds. Don't mix too much
- Preheat the oven to 400 and grease the muffin pan
- Put the batter in the pan and bake for 12-15 minutes
