Oat Banana Bread

Ingredients
  

  • 1 cup gluten free oats
  • 1 1/4 cup gluten free flour I used King Arther
  • 1/4 cup brown sugar
  • 1/4 cup coconut sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp cinnamon
  • 3 bananas
  • 2 eggs
  • 1 tsp vanilla
  • 3 tbsp butter melted

Instructions
 

  • Preheat the oven to 350
  • Line a 9 inch bread pan with parchment paper
  • In a food processor pulse the oats until slightly ground but still a little bit together
  • Add in the flour, sugars, salt, baking soda, baking powder, and cinnamon and pulse until well combined- then pour into a mixing bowl and set aside
  • In the now empty food processor, add in the bananas and process until smooth.
  • Add in the eggs, vanilla, and butter and combine
  • Pour the banana mixture into the dry ingredients and fold together
  • Pour into the lined loaf pan and bake for 50 minutes
