Curry Meatballs

Ingredients

Meatballs

  • 1 lb ground turkey
  • 1 egg or subsitute
  • 1 tsp fresh ginger
  • 1 tsp garlic powder
  • 1 tsp chili flakes
  • 1/2 tsp salt
  • 2 tsp curry powder
  • 2 tsp red curry paste
  • 1/2 cup almond flour

Curry Sauce

  • 1 tbsp coconut oil
  • 1 tbsp minced garlic
  • 1 onion- chopped
  • 2 tbsp red curry paste
  • 2 can coconut milk
  • 1 tsp fish sauce
  • 1 tbsp coconut aminos

Instructions

Meatballs

  • Preheat the oven to 350
  • Line a baking sheet with parchment paper, roll the turkey into balls and place on the sheet
  • Cook for 20 minutes or until internal temp of 165

Curry Sauce

  • Cook the onion in the coconut oil in a pan for about 3 minutes and then add in the garlic, curry paste, fish sauce, and coconut aminos
  • Once mixed well add in the coconut milk and stir well
  • Add in the meatballs and enjoy!
